I haven't tried to make this yet. I'm going to try very soon, but here's my starting ingredients

1lbs Ground Beef.
1/2 cup shredded cheddar (preferably sharp)
10 large flour tortillas
Taco Seasoning
1/2 onions (optional)
1 green or red pepper (Optional)
Beans (preferably refried)
Cumin
Chilly Powder

Brown beef, drain, add water and taco seasoning as directed. Put in dish and set aside.

Dice onions and peppers. Cook in same skillet. Add cumin and chilly powder to taste. (Probably 1/2 tsp. cumin and 1 tsp. chilly powder) Once tender and slightly brown, add to dish and stir into meat.

Prepare beans according to directions.

Spoon about 3 tbsp of meat/veggie mix into the center of 1 taco. Sprinkle cheese on top. Add a tbsp of beans on the side. Now with your spoon, move the ingredient pile 1/4th the diameter of the tortilla towards one side.

Now start folding the tortilla shell into the burrito shape. Assuming you moved the meat to the left, fold the top and bottom so that each side covers half of the ingredients and meat in the middle. Now fold the left end over covering the ingredients completely and roll until the right side is completely wrapped. The tip of the right end should end up on the bottom of the burrito and it's own weight should keep it wrapped.

(Depending on the  tortilla type one trick to keep the burrito wrapped better is to dip your finger in water and lightly spread the water on the inside of the burrito. This also works for Egg Roll shells)

After you have wrapped all of your burritos, place them on a cookie sheet an inch apart and cook for 10 minutes at 350. This will melt the cheese, cook the beans again for better taste, soften the veggies, and harden the tortilla shells.


I'm going to try to cook this today and make any adjustments to the recipe as needed.

so I did try this and everything worked out great except that baked beans are really not an option. I updated the above post to remove any mention that that could have ever been anywhere close to a good idea.

Bought some pinto beans. I should get the chance to take another shot at this.  Grin
